Coconut Coffee Cake
INGREDIENTS:
CAKE
4 cups all purpose flour
1/2 tsp. salt
1 cup margarine
1 tbsp. + 1 tsp. baking powder
1 1/2 cups Coco Reál Cream of Coconut
3 eggs
CRUMBLE TOPPING
1 1/2 cups all purpose flour
1 1/2 cups sugar
1 tsp. cinnamon
1 tsp. nutmeg
1 stick salted butter
ICING
1 cup powdered sugar
1/4-1/2 cup Coco Reál Cream of Coconut
DIRECTIONS:
1. Grease and flour a 9" x 13" pan.
2. Preheat oven to 350
°.
3. CAKE DIRECTIONS: Place flour, baking powder and salt in a bowl. Cut in margarine.
4. Add Coco Real and eggs to flour mixture.
5. Pour entire flour mixture into prepared pan. Set aside.
6. CRUMBLE TOPPING DIRECTIONS: Mix flour, sugar, cinnamon and nutmeg in a bowl. Cut in butter. Sprinkle mixture onto batter in pan.
7. Bake approximately 35-40 minutes or until golden brown.
8. ICING DIRECTIONS: Sift powdered sugar into a bowl. Mix in Coco Reál.
9. After cake has cooled, drizzle with icing.
