Tropical Muffins
INGREDIENTS:
1/2 cup sugar
2 sticks of salted butter
4 eggs
1 bottle (2 cups) Coco Reál Cream of Coconut
1 tsp. salt
2 1/2 cups all purpose flour
1 tbsp. baking powder
1 cup Mandarin oranges - drained
1 cup crushed pineapple - drained
DIRECTIONS:
1. Preheat oven to 350
°. Grease muffin pan or use cupcake papers.
2. Beat butter and sugar together.
3. Stir eggs into butter and sugar mixture, one at a time.
4. Add Coco Reál into mixture. OPTIONAL- Set aside a small portion
of Coco Reál to drizzle over finished muffins as pictured.
5. Add sifted flour, salt and baking powder. Fold in fruit.
6. Fill each muffin cup 3/4 full and bake for approximately 35-40 minutes or until golden brown. Let cool.
